Summertime . . . and the living is easy at Small Hope, Andros, Bahamas

This is my FAVORITE time of year here at Small Hope Bay Lodge, Andros Island, Bahamas. The sun shines in the morning. The seas are like glass for the morning dives - so clear that from the boat, I can look down in to 30 feet of water and tell which corals and types of fish are down below. The afternoon brings incredible tropical showers then the day is beautiful and bright once more. And the glorious starry nights are made even more amazing by the lightning shows off on the horizon. The water is between 82 and 84 degrees, perfect for a swim, snorkel or dive, day or night. All in all - Perfect!

News from Small Hope.................


A big HELLO to everyone out there!!

So what has been happening at Small Hope lately???

We have had Chris, Fred and Pete from Massachusetts back for some fun in the sun and early morning Over the Wall dive, it was great seeing them again.

Bill and Jean are back for a visit from Canada. They have been coming since the 60's! Watch a video of Bill and Jean chatting with Jeff.

We have had a lovely beach wedding. A big congratulations to Lewis and Maria from Chicago!

Kit Cat Slice

 A new dessert from Chef Scott..........



Le Kit Cat (adapted from Michel Richard Happy in the Kitchen).  sometimes i make this as a tart using a corn flake crust in the same way you would make a graham cracker crust.  either way, cut in very small slices (like a candy bar kit kat) or petit fours as it is quite rich!

Bottom Layer

  • 2/3 cup creamy peanut butter
  • 2 tablespoons peanut oil
  • 7 ounces milk chocolate, melted and cooled slightly
  • 1-1/4 cups crushed cornflakes, corn chex or rice krispies

Top Layer

  • 1-1/4 cups heavy cream
  • 5 ounces 60% semisweet chocolate, melted and cooled slightly
Line an 8-inch square pan with plastic wrap, letting it overhang on all sides.
For the bottom layer, place the peanut butter and oil in the bowl of a stand mixer fitted with the whisk attachment. Whip on medium to medium-high speed until thoroughly combined and light in color, 2 to 3 minutes, stopping to scrape down the sides as necessary. Reduce the speed to low, add the chocolate, and mix for a minute, or until thoroughly combined. Remove the bowl from the mixer and stir in the cornflakes.
Pour into the prepared pan. Using a small offset spatula, spread the mixture into an even layer, being sure to reach into the corners. Cover with plastic wrap and refrigerate until firm, about 30 minutes.
For the top layer, in the bowl of a stand mixer fitted with the whisk, or in a large bowl using a hand held mixer, whip the cream until soft peaks form. Place the chocolate in a medium to large bowl. Working fairly quickly, fold half of the whipped cream into the chocolate. Fold in the remaining cream.
Pour the mixture over the bottom layer and spread into an even layer, being sure to reach into the corners. Bang the bottom of the pan against the work surface to eliminate any air bubbles in the top layer.
Cover with plastic wrap and refrigerate until the top layer is set, at least 4 hours. (At this point, the dessert can be refrigerated for up to 3 days.)  it also freezes well for longer storage. Pin It Now!

Two Family’s of Friends

When we were shopping around for a vacation, we looked at tons of websites to find a place for our family’s vacation, after spending time on the phone and exchanging emails with the staff, we settled on Small Hope Bay Lodge.

We arrived and were immediately offered drinks and lunch. We spent our first night weathering a tropical storm. The cabins are rustic but sturdy and at 20 feet from the water, it was an amazing kick off to a great week.



We have made new friends, gained new skills (SCUBA for 12 year olds) and relaxed. The setting while rustic, is beautiful and scène. Everyone was extremely helpful and lovely. We travelled with a 1 year old and found it very easy to accommodate. We will be back next year!!!

Learn To Dive On the Andros Barrier Reef

Frank and Benedict escaped the rigors of a wedding for a couple of days of relaxation at Small Hope Bay Lodge. Listen to them talk about their time here, enjoying the food, people and activities! Both tried the Discover Scuba Diving course and Frank went to the reef to see the fish from below the water. Benedict was content to stay on top, viewing the Andros Barrier Reef while snorkeling!
