The Week of the Hammerhead!

The start of the new year came, hopefully (!), with a taste of things to come......three separate hammerhead sightings in one week! The first of these was at King Kong's Ocean Blue hole - a great dive in its own right but throw the silhouette of a 10ft hammerhead cruising 20 feet above you into the mix and you've got something really spectacular! A real treat for our divers, Josh, Brent, Derek, Chris and Veronique! When it comes to capturing this elusive shark on camera, Small Hope has, in the past, found themselves a little jinxed (forgotten lens cap, low battery, simple shock and awe resulting in forgetting to raise camera - not mentioning any names), but this time Dennis rose to the challenge (check out the YouTube video).

The second sighting of the week, came from one of our interns, Max. While following up behind the other divers, dive master Max glimpsed the unmistakable hammerhead shape disappear back into the blue. No video evidence for this one, but we're not one to doubt our trusty interns!!

The final sighting came yet again from Dennis. While half the group were starting to ascend after a wonderful dive at Whip Wire Wall, Dennis and his buddy, Allen, had an up close encounter with another 10ft hammerhead! After yelling as loud as they could to get the rest of the group's attention (a difficult task through your reg underwater), they followed the animal a little ways out from the wall........a brief cruise along the top of the wall and the magnificent beast vanished into the blue!

All in all, a fantastic week for diving here at Small Hope, and a great reminder to hang around Dennis ('Lucky Friend of the Hammerhead') on as many wall dives as possible!!!

Jeff Goes to the Big City

Our fearless leader, Jeffrey Birch, justgot back from the Paris Dive Show or Salon de la Plongée . Despite some smallreluctance Jeff had about traveling so far, he unsurprisingly had a spectaculartime! Jeff took lots of pictures (successfully making everyone else veryjealous) of the city, the dive show and especially the FOOD!

Small Hope Bay Lodge has been attending theParis Dive Show for many years now and Jeff was able to reunite with some goodfriends. Theshow itself proved to be extremely well organized and fun for all! One couple,Audrey and Cedric, were lucky enough to have their wedding sponsored by theBahamas Ministry of tourism as well as the Dive Show. The ceremony was performedin the pool at the Dive Show! The lucky couple is now off to the Bahamas fortheir honeymoon and will even make it to Small Hope Bay Lodge to renew theirvows.

As anyone who has been to Paris willtestify, food there is something taken very seriously. In the dive show itselfthere were all kinds of foods stalls filled with unbelievable snacks. After theshow each day, Jeff went out with Karin Mallet, the Bahamas.com representativein France. She took him to many restaurants but Jeff’s absolute favorite wasthe food market. Rows and rows of the freshest and ripest fruits andvegetables, mountains of too many cheeses to even try to name, freshly cutmeats, so many types of olives to make your head spin and freshly bakedpastries around every corner.

Sandcastles at Small Hope Bay

We had some guests treat us to some excellentsandcastle construction this week. Our guests Justin Trudeau and 7 year-oldAlex both impressed everyone with their sandcastling skills.

Justin came here this time with his wife and childrenand fit in just like family. He also visited Small Hope when he was a verysmall child with his father. Justin's father, former Prime Minister of Canada, Pierre Trudeau, also fit in like family with Small Hope Bay Lodge founder Dick Birch.Justin was retracing steps that were both memorable, emotional and SmallHope salutes him, his lovely wife, Sofie and their two adorable kids.

Justin came prepared with his own sandcastle kit andAlex was keen to take some tips from him. Both castles had bridges and turrets,there was a moat, and towers, one even had a cracked brick façade. Both guests showed firm dedication as theytook time out in between dive trips to perfect the fortresses. It took almost awhole day to complete the masterpieces, but as the sun was setting, both lookedvery impressive and have now well and truly laid down the gauntlet for our nextSandcastle enthusiasts!

Happy New Year!!!

Another New Year was rung in at Small Hope and what a sweet party it was! Our evening started around the outside bar where we had a pleasant breeze keeping us cool. Not only did we have a full lodge but many of the Birch family was here to celebrate with us as well, not to mention other Andros Island friends who stopped by for some cocktails.

At 7pm, Michelle and Renauldo announced dinner and WOW, a huge feast including ham, turkey, stuffing, coconut shrimp and spinach and artichoke bisque was served. That was followed by 42 (yes 42!!!!) desserts - a new Small Hope Bay Lodge record. Among them - chocolate chip cookies, key lime pie, New Orleans style cheesecake, double chocolate decadence cheesecake, sweet potato pie, homemade eggnog, and sex in the pan.

After dinner guests were treated to cocktails inside and outside as well as Alec's traditional New Years Bang Bangs - shots of tequila mixed with Sprite and banged on the counter for extra fizz. We all made our hats in the Games Room. Some made more simple hats while some left no glitter or rhinestone untouched.

We took down the Christmas tree and started the bonfire down the beach. At the countdown, the tree was tossed in and our newly made hats too. We could see fireworks displays from Nassau but decided to add some fireworks of our own for good measure.

All in all, it was an amazing night and the only sad thing is that we have to wait a whole year to do it again . . .

'Twas the night after Christmas at Small Hope Bay Lodge . . .

We had another wonderful Christmas here at Small Hope Bay Lodge. Full dive boats, fishing, kids playing on the beach . . . And to finish a wonderful day we had an extraordinary feast prepared by Renauldo, Michelle and Denise, including a whopping 33 desserts! The day after Christmas was enjoyed by amazing dives in the morning and afternoon (gotta burn off those desserts, right?). A lodge filled with families and friends celebrating the holidays together is definitely my idea of a great time. Small Hope is now in to our 51st year of operation and it just keeps getting better.

With the weekend upon us, why not treat yourself to some pancakes for breakfast??

A little taste of Small Hope at home.......

Irene’spancakes

4 cup. flour

1 teaspoon. baking powder

3 eggs

1 cup. sugar

1\4 teaspoon nutmeg

1\4 teaspoon cinnamon

½ c. cream

Water or milk as needed

Combine wet ingredients and beat in flour and spice till justsmooth. Add a

Little cold water if needed. Best if rested cold an hour before

using.

Renauldo's Stuffing Recipe................

This is the basic stuffing recipe that I do, because some people have allergies, or a vegetarians or similar. Therefore you can add to this recipe, any type of meat that you liked, whether it is a type of seafood like lobster or shrimp, or meat, or combination.

It’s all base on your preference.

1 tbsp. Vegetable oil

3-8 oz blocks Butter

2 cloves Garlic, minced

1 Onion, diced small

2 pieces Celery, diced small

1 Carrot, diced small

1 Sweet pepper

Red and Yellow Pepper, (for color primarily)

1 ½ cup Chicken or Vegetable Stock, or broth

15 cups medium size cubed French bread or bread of choice

1 tbsp. Oregano

1 tsp. salt

½ tsp. crushed Red Pepper flakes

1 tsp. paprika (if you have it)

2 tbsp. Garlic powder

2 tsp. Basil

½ tsp. Black pepper

Heat pan on medium high heat. When hot, add vegetable oil, and melt butter in it.
Add Onions, celery, carrots, peppers, and garlic. Cook until nice and soft, about 3-5 minutes.
Add stock and let come to a rolling boil. Add seasonings and let mix together.
Add bread and mix until bread absorbs all of the liquid.
Adjust as necessary with more bread, or liquid as necessary to desired consistency.

If you use water instead of broth, then adjust salt 1 tbsp.

Several things to note:

If you’re using bacon, or pork fat, chop up fine and then fry down in the butter with the vegetables.
If you’re using meat, or seafood add at the stage that you’re cooking you’re vegetables also.

Closing Time...............

We are half way through closing for another year!!!

Scuba and Sassy have been helping out.

We had a great closing party at Somerset Beach, some much need fun in the sun and relaxation.....
The cabins are getting a spruce up,the boats a getting a new paint job, new divemaster Erin is working on the glass room, we have convince Jeff for some new cushion covers for the lounge so we can't wait for them to arrive!!!

The hot tub has got a brand new deck, no more nails sticking up and a hand rail for easy exit and entry........

The dive staff have been helping ANCAT clean up the mouth of Fresh Creek in conjunction with Project Aware's Debris Month of Action, we got quite a lot, here is just some of what we got.........

9 tyres
7 car parts
408 pieces of rubber
1 baby carriage
1 very large heavy block

That is just the beginning of what is there, we could all help out every weekend for a year and we wouldn't get it all clean!!!!

We can't wait to see everyone again.....................

Summer is well under way.......

The summer is half over now and that means closing time for Small Hope, and that means it is time to spruce the place up ready for another season!!

Dive intern Kate has finished her Rescue Diver Course, so a big CONGRATULATIONS to her!!

It is unfortunate that dive master Antonio is leaving us at the beginning of August, we wish him all the best in the future.

With Antonio leaving us we were in need of some new dive staff, so let us introduce you to Erin from Chico, California and Federico from Buenos Aires Argentina they have joined the Small Hope team.

Scuba and Sassy are growing bigger everyday and a big thank you to Kelly and Mason Weaver for the puppies care package!

A big thank you to all our Summer Interns, Petter, Simen, Ben, Rodney, Luke and Davis, it has been fun working with you all!

It was a great treat the other day for dive master Joe, while diving out near the old compressor frame at the dock two dolphins swam by!!

Oatmeal Cookies

Ingredients

¾ cup shortening
½ cup brown sugar (packed)
½ cup granulated sugar
1 egg
¼ cup water
1 teaspoon vanilla
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon cinnamon
½ teaspoon soda
½ teaspoon cloves
1 cup raisins
1 cup chopped nuts
3 cups quick-cooking oats

Method

Heat oven to 350˚. Mix thoroughly shortening, sugars, egg, water and vanilla. Stir in remaining ingredients.

Drop dough by rounded teaspoonfuls 1 inch apart onto greased baking sheet. Bake 12 to 15 minutes or until almost no imprint remains when touched with finger. Immediately remove from baking sheet.

BBQ Ribs for a party................

For 2 slabs pork ribs:

Dry rub:
1/4 c. salt
1/4 cup sugar
1 T. black pepper
1 t. each: paprika or smoked paprika, cumin, garlic powder
1/2 t each ground allspice, cinnamon
1/4 t. cayenne

Braising liquid
8 cups beef or chicken stock (pref. unsalted)
2 bay leaves
1 T. black peppercorn
2 whole allspice
1 can goombay punch (optional)
8 cloves garlic

Method
bbq sauce (adjust the sugar or vinegar level according to your preference)
4 cups braising liquid from after ribs have finished, strained and skimmed of fat
4 T. tomato paste, or 1 cup tomato sauce
1 cup apple cider vinegar
1/2 cup packed brown sugar (can sub honey)
hot sauce to taste (here i use a few drops of local goat pepper sauce
black pepper
(should not need additional salt, but check)

preheat oven to 300°F
*peel membrane from back of slab, rub ribs well and let flavors penetrate for 15 minutes
*bring all the braising liquid ingredients to a boil
*heat oil in a flying pan and lightly sear and brown the ribs (be careful not to burn the sugar too much from the rub)
*select a dish or pan suitable for oven-braising...place ribs in pan, covered half way in the liquid. bring it back to a simmer, cover and place in the preheated oven
*cook covered in the oven until the meat is tender and just begins to fall off the bone,
*carefully remove from pan and reserve until ready to grill

*on a low to medium heat (you can use smoking wood if you like), grill the ribs covered without sauce to lightly mark, the brush sauce liberally on the ribs and finish. serve with additional brush of warm sauce, or along side.

Goes great with coleslaw!

Oh What A Week SO Far............................

SOOOOO this week is full of excitement!!!

We have been diving everyday, a nurse shark was spotted, eagle rays have been seen under the dock, and we have a perfect night for a snorkel under the dock were we saw, lobsters, crabs, octopus three of them!!! and sting rays.....

We have had some guest enjoying some time on the flats with Glister and what a lovely time they had.......

The Children have been hanging out with babysitter Kaylisa for story and play time.

The big thing happening this week is the WEDDING of Matt and Kristen on Saturday the 21st of May!!!!

Baked Macaroni and Cheese Pie...................

A lovely Bahamian dish!!

250g\8oz cooked macaroni

When macaroni is cool add

1 tablespoon finely chopped onion

1 tablespoon finely chopped green and red pepper

1 tablespoon finely chopped celery

170g\6oz cheddar cheese grated

salt and pepper to taste

2 cans of evaporated milk

2 eggs

If you please you can add some hot sauce or chilli

Mix everything together. Place in baking pan, sprinkle with extra cheese on top.

Cook for 10 minutes or until hot in the middle and golden on top.

Enjoy with some fried chicken and salad

A few words from Tammy and Charles, who were visiting Small Hope for some relaxation and snorkeling.....

We came to Small Hope with high expectations of the typical Bahamian vacation with beautiful turquoise waters and perfect weather so of course we were really pleased by what found. However after less than 5 minutes on the property our vacation become more than just our surroundings, Leyna and Aidan greeted us with the perfect welcome and instantly made us feel as if they were genuinely happy that we were here. Than Mel and Joe joined the welcoming and were also perfect hosts. Later we met Dennis, Antonio and Loren. Our diver masters along with Joe who took us to the most incredible snorkel spots for coral and fish and even a shark snorkel.

So for us what set Small Hope apart so dramatically are the people here? From the personal service of all the staff, to the ladies who cleaned our room.

Renaldo the chef here prepared the most delicious meals every evening which was a special way to end each perfect day. By far surpassing all other Caribbean visits.

Lemon Meringue Pie..................

Ingredients

10 inch baked pie shell

2 cups sugar

½ cup cornstarch

2 cups water

4 egg yolks, slightly beaten (save the whites for meringue)

¼ cup butter or margarine

2 teaspoons grated lemon peel

2/3 cup lemon juice

2 drops yellow food color, if desired

Meringue for 9-inch Pie

Method

1. Bake pie shell.

2. Heat oven to 400°.

3. Mix sugar and cornstarch in medium saucepan.

4. Gradually stir in water.

5. Cook over medium heat, stirring constantly, until mixture thickens and boils.

6. Boil and stir 1 minute.

7. Gradually stir at least half the hot mixture into egg yolks.

8. Blend into hot mixture in pan.

9. Boil and stir 1 minute (2 minutes for 10-inch pie).

10. Remove from heat; stir in butter, lemon peel, lemon juice, and food color.

11. Pour into baked pie shell.

12. Heap meringue onto hot pie filling; spread over filling, carefully sealing meringue to edge of crust to prevent shrinking or weeping.

13. Bake about 10 minutes or until a delicate brown.

14. Cool away from draft.

Meringue

4 egg whites

¼ teaspoon cream of tartar

½ cup sugar

¾ teaspoon vanilla

1. Beat egg whites and cream of tartar until foamy.

2. Beat in sugar, 1 tablespoon at a time; continue beating until stiff and glossy. Do not under beat.

3. Beat in vanilla.

Enjoy with some ice-cream or whipped cream or by itself

Jeff's Ladder

How did the site get its name?

Well, that's an amusing tale… Jeff Birch took an early era dive boat to the site, and when the divers returned to the boat after the dive, they had a hard time getting back on board. Somebody had forgotten to put down the ladder!

This site consists of two large circular sand patches surrounded by corals, situated near a false wall. Jeff’s Ladder is a great site for divers completing their certification, as it has a nice sandy bottom for skill work. Navigation is particularly easy for divers, as both sand patches cover a large area, so it's pretty difficult to get lost here. Nurse sharks tend to hang out under the coral ledges, flamingo tongues live on the soft corals and blue tangs spot the reef in their quick moving shoals.

It has been a busy couple of months here at Small Hope, Spring Break has been going for 2 months!

We have meet some great new friends and had the chance to reconnect with old friends.

Easter has been and gone, and what fun we had......

We both had a great time at Small Hope Bay Lodge!

The place itself is amazing but what adds even more is THE STAFF!!!

I can’t begin to say enough about them. They are all so friendly and multi-talented, extremely nice young people to help you enjoy your stay at Small Hope.

We mostly snorkeled, relaxed, ate very well, went to Captain Bills Blue Hole and played cribbage!!

Did a lot of hammocking as well!

Fantastic reefs, with great visibility, teeming with fish of all colors. From the divers we talked to they all said the dives were fantastic! You must do the Shark Emporium Dive or snorkel as I did a memorable experience to be sure!

Kudos to Jeff for offering the opportunity to enjoy Small Hope Bay Lodge, for being such a friendly, gracious host!!

Thanks to all Jeff, Nicky, Mel, Loren, Aidan, Leyna, Antonio, Joe, Bhurna, Austin, Abba, Dennis And thanks to Renaundo and ALL of his kitchen staff for the great meals!

We have had Chris, Fred and Pete from Massachusetts back for some fun in the sun and early morning Over the Wall dive, it was great seeing them again.

Bev and Rudy's Seaside Wedding......

On Tuesday 22 March 2011, Bev and Rudy got married!!!

It was a quiet afternoon wedding. The sun was shining, the wedding arch was decorated, there was a light sea breeze, the day was perfect!!
Revered Hamilton was on hand for the ceremony and his words of wisdom. The vows were said, the marriage certificates were sign, it was then time to enjoy the afternoon sun on the outside patio with music and the first dance as man and wife.
A big congratulations to Bev and Rudy on their special day and thanks for sharing with Small Hope staff and guest!!!!

North Andros land tour with your guide- Dennis

Wanting to know more about the Big Yard, they call “Andros Island”?

Find out about the history of the island, stop to see just a few of the inland blue holes & learn how they came to be named, hear about the logging days, & learn some folk laws and myths.

You will see some local working farms which provide Small Hope with fresh fruits & veggies!

Explore Captain Henry Morgan’s cave were all the treasure is said to be hidden, or for the more adventurous we will go and see Evan’s cave and blue hole- a small walking trail.

We hit the open road with a cooler of fruits, sodas and drinks and have a great afternoon.

A new dessert from Chef Scott..........

Le Kit Cat (adapted from Michel Richard Happy in the Kitchen). sometimes i make this as a tart using a corn flake crust in the same way you would make a graham cracker crust. either way, cut in very small slices (like a candy bar kit kat) or petit fours as it is quite rich!

Bottom Layer

2/3 cup creamy peanut butter
2 tablespoons peanut oil
7 ounces milk chocolate, melted and cooled slightly
1-1/4 cups crushed cornflakes, corn chex or rice krispies

Top Layer

1-1/4 cups heavy cream
5 ounces 60% semisweet chocolate, melted and cooled slightly

Line an 8-inch square pan with plastic wrap, letting it overhang on all sides.
For the bottom layer, place the peanut butter and oil in the bowl of a stand mixer fitted with the whisk attachment. Whip on medium to medium-high speed until thoroughly combined and light in color, 2 to 3 minutes, stopping to scrape down the sides as necessary. Reduce the speed to low, add the chocolate, and mix for a minute, or until thoroughly combined. Remove the bowl from the mixer and stir in the cornflakes.
Pour into the prepared pan. Using a small offset spatula, spread the mixture into an even layer, being sure to reach into the corners. Cover with plastic wrap and refrigerate until firm, about 30 minutes.
For the top layer, in the bowl of a stand mixer fitted with the whisk, or in a large bowl using a hand held mixer, whip the cream until soft peaks form. Place the chocolate in a medium to large bowl. Working fairly quickly, fold half of the whipped cream into the chocolate. Fold in the remaining cream.
Pour the mixture over the bottom layer and spread into an even layer, being sure to reach into the corners. Bang the bottom of the pan against the work surface to eliminate any air bubbles in the top layer.
Cover with plastic wrap and refrigerate until the top layer is set, at least 4 hours. (At this point, the dessert can be refrigerated for up to 3 days.) it also freezes well for longer storage.

Leah and Jon’s wedding day…………..

The wedding arch was decorated with hand picked flowers and palms, the bouquet and boutineers were made and ready, the chairs were set up, the music playing, the scene was set!

So on Saturday afternoon on the 12 of February 2011, Leah and Jon were married on the beach, by Reverend Newton Hamilton in front of their family and friends. The paper work was signed, the cake was cut, speeches were given, and then it was time for the first dance as man and wife. Then the party started and into the wee hours of the morning it went!

So congratulations to Leah and Jon and thank you for letting Small Hope be part of your special day……

Dennis- from Andros Island

Dennis is from North Andros. He married a Bahamian lady from Love Hill and now has three children & one on the way.

Dennis has been working at Small Hope for 5 years. Dennis has a passion for diving. He completed all of his dive training at the lodge. Instructors on site helped Dennis accomplish his dive master level. He is looking forward to becoming an Instructor

Joe- from England

Joe had spent his summers learning to sail in the North Sea. He worked in many resorts in the Mediterranean teaching guest how to sail & windsurf. Soon after, Joe found his true passion for diving & did his Open Water Course at Gildenburgh UK. He then went on to do his Dive Masters in Egypt & eventually became an Instructor.

Antonio- from Mexico

Antonio started diving as a child with his dad. Antonio completed his Open Water Course in Veracruz, Mexico. He has been diving in and around Mexico ever since. He went on to complete his Diver master and Instructor at Bahias de Huatulco Mexico.

Backing up the main crew on the dock is new intern Kate, Renauldo, Randy and as always Jeff and Mike are always around........

Shelly's Lobster Salad

Ingredients

10 Lobster tails
4 Tablespoons lemon or lime juice (fresh or from the bottle)
1 onion finely chopped
1 red, yellow & green sweet pepper finely chopped
2 large tomatoes, De-seed and finely chopped
1cup of mayonnaise ( you make your own of brought is fine)
1 teaspoon of goat pepper sauce
Salt and pepper to taste

Method

Bring a pot of water to the boil with some salt, bay leaf and whole pepper corns. If you want you can add half a cup of white wine to the water. When boiling add the lobster tails, you know the lobster tails are cooked when the shell turns a red colour.
Cool them down and then you crack them, get the meat out of the shell, you can them either dice the meat or shred it.

While you are waiting for the lobster tails to cool you can chopped the onion, peppers, and tomatoes. To remove the seed from the tomatoes, you cut them into quarters and remove the seed part of the tomato from the flesh, you do this so the salad is not to wet.
Once you have cut all your ingredients place them in a mixing bowl large enough to hold the 10 lobster tails as well.
Add the mayonnaise, pepper sauce and lemon\lime juice and mix together.
Add the lobster tails and mix, add seasoning and taste. Adjust seasoning to taste.

Serve on a bed of lettuce and enjoy with crusty bread and a glass of chilled white wine

Mmmmm Carrot Cake

Carrot Cake an old favorite for many........

2 cups sugar
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
2 cups grated carrots
1 1/3 vegetable oil
2 eggs, beaten
1 cup chopped pecans
1 cup drained crushed pineapple
2 teaspoons vanilla extract
1/2 teaspoon lemon extract
1/2 teaspoon almond extract

Combine dry ingredients in a large mixing bowl. Add carrots, oil, and eggs. Beat until well mixed. Stir in remaining ingredients. Put batter in two 9x5x3-inch loaf pans. Bake at 350° for 1 hour. Frost with cream cheese frosting or glaze as desired.

Cream Cheese Frosting

1 package (3 ounces) cream cheese
1 tablespoon warm water
1 teaspoon vanilla extract
3 cups sifted confectioners' sugar

Beat cream cheese with water and vanilla; gradually add sugar, beating until smooth and spreading consistency. Makes 1 1/2 cups, enough to frost top and sides of a 9-inch square cake or top of a 13 x 9-inch cake.

Two Family’s of Friends

When we were shopping around for a vacation, we looked at tons of websites to find a place for our family’s vacation, after spending time on the phone and exchanging emails with the staff, we settled on Small Hope Bay Lodge.

We arrived and were immediately offered drinks and lunch. We spent our first night weathering a tropical storm. The cabins are rustic but sturdy and at 20 feet from the water, it was an amazing kick off to a great week.

We have made new friends, gained new skills (SCUBA for 12 year olds) and relaxed. The setting while rustic, is beautiful and scène. Everyone was extremely helpful and lovely. We travelled with a 1 year old and found it very easy to accommodate. We will be back next year!!!

We recently had some returnee guest who has been coming to Small Hope for over twelve years. It was good planning on all party’s part that they got to meet up this year for a few days. To catch up at Small Hope were they all first meet.

Lisa & Jim, who are both keen dives, enjoyed being back in the water with new and old dive masters. Jim also enjoy a few afternoons of bone fishing with Giles.

Giles, Paula and Alex arrive next. Alex has been an intern here the last two summers. Alex is a keen diver and this summer enjoy the diving while only having to intern for part of his summer. Giles is a mad keen fisherman who comes to Small Hope both for the diving and the bone fishing. Paula is a diver and also enjoys the relax atmosphere that is Small Hope.

Dan, Cynthia & Casey are all divers. Casey started coming here when she was just 3, she is now 13. Casey learnt to dive at Small Hope and also enjoys the chance to relax. Dan and Cynthia are both divers and take this opportunity to enjoy some diving and good conversation with other guest.

It was great to see all them together and reminisce about times gone by and how when coming back to Small Hope it is like returning home as everything is familiar and just as you let it.

Mmmmm Fudge Cake

Cocoa fudge cake
Always a favourite

1 2/3 cup flour
1 ½ cup sugar
2/3-cup cocoa
1 /2 tsp. baking soda
1 tsp. salt
1 ½ cup buttermilk
½ cup shortening
2 eggs
1 tsp. vanilla

Chocolate icing

Heat oven to 350 . Grease and flour rectangular pan 13*9*2, 2 round pans 8 or 9*1 ½, or 12-cup bundth(cake pan with hole in middle) cake pan. Beat all ingredients except frosting in large mixer bowl constantly, 30 seconds. Beat on high speed, scraping bowl occasionally, 3 minutes. Pour into pan(s). Bake until wooden pick inserted in center comes out clean, rectangular 35-40 minutes, layers 30-35mins, Bundth(cake pan with hole in middle) cake 40-45 minutes. Cool layers or bundth cake 10 minutes, remove from pan. Cool completely. Ice rectangular or fill and ice layers with the icing. You may sprinkle with powdered sugar.

This was made possible due to a Community Grant given to Ancat from the Royal Bank of Canada.

This dive was successful because it was agreed amongst the divers that the 30 to 50 feet depths is now clear of trash, the divers have decided that a further dive needs to be carried out to take up the debris from the 70-90 feet depths, this will occur sometime in the New Year.

The dogs of Small Hope Bay Lodge.................

Guest services goes beyond the human staff at Small Hope. Small Hope’s two resident dogs, Rex and Sarah, like to chip in now and then as running companion or beach tour guides. One afternoon last week we became the first guests to test their river guiding skills.

As we entered Davis Creek for a kayak paddle, we were met by both dogs as they enjoyed racing across the flooded sand bars. Soon though, it was all business for Rex as he decided it was his job to guide us up Davis Creek, swimming ahead of the kayak. Rex and Sarah earned a special dinner treat for creating such a fun experience and ensuring we did not get lost in the mangroves.

Our first diving experience was at Small Hope Bay Lodge in 2003 on a family vacation. We did the Discover SCUBA course and were immediately taken with diving.

Soon after that trip my brothers and I received our Open Water SCUBA certification and have since taken trips to the Florida Keys and Mexico; however we have yet to find an experience that could compete with the one we had at Small Hope.

When we were putting together a diving trip for the youngest brother Nick’s graduation in 2010 we knew that we wanted to be back at SHBL. In the six years since our last visit, not much has changed, but everything we loved when we were kids is still here, the cabins tucked right next to the beach, the extreme variety of diving (wall, reef, Blue Holes, wreck dives), great conversations with the other guests at the communal dinner every night and an attitude among the enthusiastic staff of making sure every guest feels at home.

As you fall asleep at night listening to the waves on the beach you can’t help but feel like you aren’t at a resort but rather a good friends place in the Bahamas, and of course you always wish you could stay for one more night.

Learning how to Cave Dive...........

In October Small Hope dive masters Joe and Antonio were lucky enough to go to Abaco and learn how to dive in caves. Here is an account of how the training went from dive master Joe

Cave Training Day 1
01/10/2010

OK Antonio and I arrived on Abaco Island Friday afternoon and spent the evening in the classroom looking through the manual and watching the slide show. We are doing 4 courses Cavern Diver, Intro to Cave, Apprentice Cave Diver and Full Cave Diver. Our instructor Brian Kakuk who runs Bahamas Underground has been exploring and surveying the caves of the Bahamas for 20 years.

We started today by getting all our equipment together and running through some of the drills for laying lines, low visibility and gas management issues in the yard where questions were easy to ask...

We then went down to Mermaid reef a shallow 10’ dive to practice what we had learnt in the yard and get used to the new equipment setup. We spent over an hour doing line drills, practising buoyancy and doing out of air situations.
After lunch we did our first cavern dive at Dan’s Cave which was spectacular...

Cave Training Day 2

Today has been a busy day we have done 3 dives in 3 different caves all staying inside the cavern zone. The first was at Magic Blue Hole which is an enormous cone with the top cut off the pool is about 30’ across but just below the surface it opens out to about 100’ and it is DEEP.

For the next dive we went back to Dan’s Cave Which is a MASSIVE Cavern but it is silty so you have to be careful with buoyancy and fining.

Then we did Reel Breaker which is one of the ocean blue holes as our last cavern dive. This one was flowing so hard you had to drag yourself along the bottom to get in but the ride on the way out was fun and the amount of lobsters in the cavern was staggering.

Once we got back to the shop we tidied up and then took the test.

Now its all starting to come together we did 2 dives at Dan,s Cave today the first was 120’ for 75mins and the second was 74’ for 104mins. We are allowed to go deeper and stay longer now and do some more complex navigation which opens up much more of the cave. Today we went to the Good Lands and the Bad Lands.

Two more dives out of the way today and we are done with apprentice cave. Tomorrow we are starting Full Cave which means that we will have to do more of the planning and navigation ourselves. Today we dived a new cave called Lost Reel it was darker and spookier than the others. There are the remains of crocodile skeletons and giant tortoise shells preserved in the oxygen free water it was a strange place. The second dive was back at Dan’s cave, here we did the second half of a circuit that we had set up the day before.

Full Cave started today and we were back at Dan’s Cave for 2 dives. Now we are doing more complex navigation with multiple jumps and we are going deeper in to the cave system.

We have done our last two dives for the course today and all has gone well. We dived at Dan’s cave this morning and Ralph’s Cave after lunch, both dives were spectacular and I am going to miss not diving in caves every day.
We have still got to take the final exam but we are going to do it tomorrow which gives us time to study up It is also good to have a night off book work.
Tomorrow Brian is going to take us on a special dive which we are excited about it will be much longer and more challenging than the dives we did for the course but there will be no skills to do which will be nice...

Fangorn Forest

Today we have gone deep into Dan’s cave to an area called Fangorn Forest. It is about 2000’ into the cave and you have to drop down to 150’ for a bit so it is a long dive with some long deco stops on the way out. The dive was 120mins long and there was a lot of swimming to get there and back but it was amazing

SEX 'N' PAN

Sex 'N' Pan a favorite of everybody..................Now you can enjoy it at home and the memory of Small Hope..............

Sex in the Pan

Crust:1 ½ cups Graham Cracker crumbs
2 tbsp Sugar
3 tbsp. Butter, melted

Filling:
8 ounce Cream cheese
2 tbsp milk
1/3 cup sugar
2 ½ cups whip topping*
2 packages instant chocolate pudding 4 serving size (or any flavor)
3 ½ cups milk

Method
Combine graham cracker crumbs, sugar and butter. Mix well and press into pan. Bake at 350F for 10 minutes. Cool completely. Blend cream cheese, milk, and sugar, until smooth. Whip up whip topping until of smooth consistency. Fold in half of the whip topping. Spread this mixture into crust. Mix the second milk with the pudding and blend until it thickens and of proper consistency. Spread evenly of cream cheese mixture. Spread remaining whip topping over pudding and put in fridge to set for 4 to 6 hours minimum. Garnish with grated chocolate or chocolate pieces.

*1 Large container of already prepared cool whip topping can be substituted and gives same result

Sharptail Eel what a find!!!!

While on a dive at Liben's Point one of our many shallow dive site's, dive master Dennis was lucky enough to come across a very uncommon to rare fine here in the Bahamas, a Sharptail Eel.

The Sharptail Eel are relatively unafraid of divers, they usually hide in the day time and forage in the open at night. You more likely to find them anywhere from shallow grass beds to areas of rocky rubble to reefs.

Bring the kids!! The beach located in front of the cabins is a shallow beach, great for the kids! There is also a tidal pool at low tide which is fun to explore with little ones. We have 2 sandy, white beaches for sand castle making & splashing in the waves. There are sand toys and a wooden swing set on site. On the dock we have mask, snorkels fins, & life vest for all ages, if your child is 6-9yrs, try a SASSY Dive. Our game room has toys, a climbing structure and a ping pong table.

Small Hope is like one big playground for kids-they are surrounded by nature.

The “Shark Emporium” Dive

۞ WHY WE ARE SHARK DIVING:

We do the Shark Dive in order to allow you to observe sharks, one of the most amazing and interesting animals of the ocean rarely seen up close in our area. Sharks have remained virtually unchanged for millions of years and have proven themselves a vital part of their environment. This dive will give you the change to better understand and respect shark behavior, as well as enjoy the thrill of watching them feed.

۞ HOW THE SHARKS FEED:

We have tried not to disrupt their nature as little as possible. At Small Hope Bay we use a chum ball method. A “Chum ball” consists of fish pieces frozen in salt water. Because the fish is frozen, as it melts it creates a “slow release” of the food. Using this slow release” method, sharks do not associate humans with the food. Although we are conditioning the sharks to a small degree by feeding them we feel we are not changing their behavior.When sharks feed they have a hierarchy. The sharks will swim calmly in and wait their turn; they usually feed one at a time off the chum ball. Some sharks may not even feed at all. The shark feed can last anywhere from 5 to 30 minutes depending on how long the chum ball lasts. Near the end, when the last piece of fish comes loose from the chum ball one of the sharks will try to snatch it. This action excites the other sharks creating a “Mad Dash” for the last piece of fish. The Dive masters will knock on their tanks when this time is close.

۞ HOW WE WILL DIVE THE DIVE:

To start the dive you will sit in a sandy area in front of a large coral head in about 60 feet of water. You will relax and get comfortable as the Dive Masters bring the chum ball down. As soon as they bring the chum ball down they will give you a signal that you are free to swim around. It is asked that no one goes closer than 20 feet to, and never under the chum ball. you are welcome to swim around and on top. After the food is gone, and the sharks begin to disperse, you are free to roam the bottom and look for shark teeth. You can go back to the boat at any time you like.

Vicki, Kristi, Lisa, Connie and the gang!

This morning, we bid farwell to some great new friends. Over a decade ago, Lisa and Kristi visited Small Hope. Brought back by the smell of Conch Fritters, they invited Connie and Vicki down to meet us for Lisa's 50th birthday. They took advantage of all Small Hope has to offer: they did their Discover Scuba courses, ventured to the inland Blue Hole, made their own fabrics at the Androsia Factory, ate plenty of Renauldo's delightful desserts, traveled up to northern Andros, painted their faces for Halloween, snorkeled the shallows by the keys, hammocked themselves to sleep, drank with great company, and more! One of their favorite activites was Charades with Dennis; they taught him how, and now he's hooked for life! They had a great time, as did the staff. From tricking Kristi into thinking that we couldn't cook her favorite dessert to acting out the "Accidental Virgin" in Charades, their fun energy will be greatly missed, and we hope to see them again soon!

There are many places to snorkel around Small Hope; here are some descriptions of two of the more popular snorkel spots.

The Under and Around the Dock

The dock is a place of marine abundance and a great starting point for snorkelers, weather you are just learning to snorkel or are experienced. The dock is where the ruins of a previous dock is, which has been claimed as a home by an enormous variety of marine life. The dock and its surroundings are also delightful for a night snorkel. There is every chance you will see some Sergent Majors, Snappers, French Grunts, Barracudas and schools of sliver sides.

John Rock

If the tide is high then snorkel out towards John Rock, south from the dock across the sand patch. Keep a look out for sting rays. Look into the crevices at the edge along John Rock and you could come across some needle fish, yellow goat fish and long spined urchin. Early morning and late afternoon is a good time to see southern stingray and spotted eagle rays.

Wedding Day!!

Nathan and Candice, the arc, the piggy

Bring on the flowers, the music, and the champagne! On October 30^th, 2010, Small Hope had the pleasure of celebrating the union of Nathan and Candice Madden. They were wed on Small Hope’s southern beach, next to the walkway to the dock, surrounded by family and friends, in front of a beautiful handmade arc decorated with native flowers and palm leafs. The ceremony was performed by Reverend Newton Hamilton whose moving sentiments and rich wisdom cemented the couple’s heart-felt vows to one another. After the rings, pictures, toasts, and dancing, Nathan and Candice cut the cake. For dinner, we had an absolutely delicious roasted pork cooked in a pit on the beach to celebrate the happy couple. The partying commenced into the early morning, as expected. We at Small Hope are grateful that we could host such a magical wedding right on our “front lawn”. Whether it’s a wedding, renewal of vows, or a commitment ceremony, we’ll make it an unforgettable and moving experience, Small Hope style!

Here at Small Hope we are lucky to meet so many differnet people from all walks of live and from all over the world. Renctly we meet Caterina, Annika & Michael from the Netherlands. Here are a few words from them in both English and in Dutch

Cabins right on the beach

After our first visit to SHB two years ago one thing was clear: we would return here. This time we, Caterina and Annika, also brought son and brother Michael along. On arrival we were truly welcomed as family members by everybody. A lot of the staff was still there and some of the staff was new, even from as far away as the UK and Australia. We settled in our cottage and took of our shoes for the rest of our stay.

We spent the days diving, eating well and socializing with everybody around, guests and staff. The dive staff is wonderful, the guests get to pick the dive site most of the time and everything happens in an extremely relaxed way. Always special are the night dives and the Shark Emporium. But also the shallow reef dives are our favourite because of its coral and lots of little fish. And the temperature of the water is just unbelievable.

Michael and Annika decided to go for their Advanced Open Water certification under the expert guidance of Loren. Caterina was too lazy to go for it but will consider it for the next time. It was our first time to dive Over the Wall and experience some nitrogen narcosis. Fortunately we were watched closely on this deep dive by the dive staff.

The evenings were fun, we got to know everybody in just a few days. The dinners from Denise and Michelle are so good, we will sorely miss them at home.

Michael started out at little tense because of his upcoming first year in college but had completely mellowed out by the time he left for school. Caterina and Annika got to stay another day.

On the last day we were invited to a lovely and intimate wedding on the beach carefully orchestrated by Jeff. We were happy to be part of that wonderful experience.

Back home in the Netherlands now all we can do is to plan our trip back to Small Hope Bay. Annika would actually just like to live there permanently as part of the dive staff!

Na ons eerste bezoek aan SHB twee jaar geleden was een ding duidelijk: we zouden hier terugkomen. Deze keer namen we, Caterina en Annika, ook zoon en broer Michael mee. Bij aankomst werden we door iedereen binnengehaald als familie. Veel medewerkers waren er nog, sommigen waren nieuw, zelfs vanuit GB en Australië. We betrokken onze cottage and trokken onze schoenen uit voor de rest van ons verblijf.

We brachten de dagen door met duiken, lekker eten en gezellig avonden met de gasten én de medewerkers. De duikinstructeurs zijn geweldig, de gasten mogen meestal de plek uitzoeken war gedoken wordt en alles gebeurt op een heel ontspannen manier. Altijd bijzonder zijn de nachtduiken en de Shark Emproium. Maar ook de ondiepe rifduiken zijn favoriet om het mooie koraal en de vele kleine visjes. En de temperatuur van het water is gewoon ongelooflijk.

Michael en Annika besloten hun Advanced Open Water certificaat te halen onder de deskundige leiding van Loren. Caterina was er te lui voor maar overweegt het voor een volgende keer. Het was onze eerste keer dat we Over the Wall doken en wat van de nitrogen narcosis meekregen. Gelukkig werd er door de duikinstructeurs goed op ons gelet bij deze diepe duik.

De avonden waren leuk. In korte tijd leerden we iedereen kennen. Het eten van Denise en Michelle is zo goed, dat gaan we thuis absoluut missen.

Michael startte de vakantie een beetje gestresst in verband met zijn aankomende eerste jaar in de universiteit maar hij was totaal relaxed tegen de tijd dat hij vertrok voor school. Caterina en Annika mochten nog een dag blijven.

Op de laatste dag werden we uitgenodigd om een kleine, intieme trouwerij op het strand bij te wonen, zorgvuldig geregeld door Jeff. Het was een bijzondere ervaring en waren blij dat we er bij mochten zijn.

Het enige wat we nu terug in Nederland kunnen doen is onze volgende reis naar SHB plannen. Als het aan Annika ligt gaat ze er voor goed wonen als duikinstructeur.

Small Hope Bay has exceeded our expectations. The staff have become like family to us. I Dawn completed my PADI Open Water Certification while here and the dive staff made it loads of fun for me. We have enjoyed all our dives but especially the wall dive we did. You couldn't ask for more from the a dive resort it has exceeded any and all of our expectations. Thanks for a great time.

Nature Trails around Small Hope

Here at Small Hope we offer a variety nature walks. They are suitable for every age good.

Davis Creek

The walks offer a variety of different things to see, on the Davis Creek walk you will see The Australian Pine grove which is a little inland from the beach, you can snorkel at Davis Creek and see some of the fish species common among the mangroves and there is a deserted beach which is nice for a stroll and shell finding.

Mangroves

We also have a Mangrove walk which will take up close and personal with one of the most important ecosystems in the Bahamas. On this walk you might be able to observe some wading birds such as the Great Blue Heron, Little Blue Heron and you might have the opportunity to see some Mangrove Crabs.

In Land Blue Hole

Within a nice walk or bike ride there is one of the many Inland Blue Hole's which are good for a refreshing fresh water swim or for a stroll around the edge.

We were luckly enough to have a visit from Nick, Tory, John and Lizzie from Scotland this summer and here are a few words from them about there stay here at Small Hope....

We originally came to Small Hope Bay Lodge only to snorkel, because Nick had seen the resort in 1000 Places to see before you die!

To begin with we were not sure if the children would enjoy it, but as it turned out we have all had a wonderful time.

The adults in particular liked the snorkeling, the food and the company. Lizzie (12) loved snorkeling, diving, Captain Bills Blue Hole and Rex Small Hope’s dog.

John (16) thoroughly enjoyed the opportunity to learn to dive and the company in the evenings.

Bahamaian Curry Chicken

Having trouble desciding what to have for dinner why not try cooking up this recipe....

Curry Chicken

Ingredients

12 lbs Chicken wings, cleaned disjointed

¼ cup curry powder

2 tbsp. salt

1 tsp. pepper

¼ cup lime juice

1 onion

2 carrots

3 potatoes

¾ cup curry powder

2 tsp. salt, as needed

2 whole allspice

1 bay leaf

¼ cup cornstarch

2 tbsp. sugar.

Method

1. Clean the chicken wings, appropriately.

2. Season with curry powder, salt, pepper, and limejuice.

3. Toss until well coated. Set aside.

4. Cut vegetables as directed. Set aside.

5. Heat a pot on the stove until nice and hot.

6. Place the curry powder in the pot and cook in dry pot until nice and toasted, about 3 minutes.

7. Add the chicken and toss in the curry powder until well coated.

8. Add enough liquid* to pot just enough to barely cover the chicken.

9. Bring to a boil, and reduce the heat to low.

10. Add salt, whole allspice, and bay leaf. Cook for 15 minutes.

11. Add the vegetables to the pot, and cook for an additional 25 minutes or until vegetables are tender.

12. Taste and adjust the seasonings as necessary.

13. Thicken with cornstarch and cold water if to watery.

If bitter, add equal parts sugar and pineapple juice, until taste has been adjusted.

*Note: For extra flavor chicken stock can be used instead of water for liquid, but reduce the amount of stock.

Note: Serve with White Rice and Coleslaw

We have been closed for a little while now, and the whole family is working hard to get ready to re-open on the 14th of October. The rooms have been striped, painted, and fixed up. The boats have been sanded and are ready to paint. New tank racks and seats have been made for the big boat. The maintenance sheds have be sorted out and cleaned so that they're prepared for a new year. The kitchen has been packed up, and it is getting a deep clean and a new coat of paint. Also, the office has started its clean up; it has been all hands on deck! As the saying goes, "Many hands make light work..."

Dive masters study hard

The dive masters have been studying hard in the past weeks, and they are ready to further their dive education with Mike. They have all passed their first two exams for Technical Diving International (TDI) Understanding Nitrox and TDI Gas Blender!! So a big congratulations to all dive masters, and keep up the good work in the coming weeks with your training!!!

Beach Wedding @ Small Hope

The wonderful couple Gary and Liz came to Small Hope to get married! They were after a quite, intimate, and romantic setting, and Small Hope had all that and more. The flower arch was built, the bouquets were made, and the outside bar was ready for the celebration. Once the lovely bride and groom were ready, it was wedding time!!

The day was perfect; with the waves lapping at their ankles, Gary and Liz were united in holy matrimony. We're glad they enjoyed their tropical island wedding in the relaxing environment that is Small Hope!!!
